What can you expect to find in your half pig box?

As a rough idea, you'll get at least 25kg of prime pork. A typical box will contain joints for roasting from both the leg and the loin, some chops, a tenderloin, streaky belly rashers, a hock.

Subject to availability and available on request are liver, kidney, head, trotters and tails! We'll even sell you the squeak, if needed.

Our lamb is grass fed, giving it a better taste and texture. It has a mild, delicate flavour which should be kept in mind when you are considering any recipe.

What can you expect to find in your half lamb box?

The pictures below are taken from an average half lamb in a box .  As our lambs come from various producers , not all boxes will be exactly the same, but this gives you an idea of how much meat will be in your box.

A side of mutton butchered into standard cuts (shoulder, half leg, shank, chops, fillet, crown, diced, etc.), separately bagged and frozen and shipped in an insulated container.

Mutton comes from sheep who are at least two years old. It has a great flavour and is excellent in spicier dishes where the more delicate flavour of lamb would be lost.  It is perfect for long slow cooking methods.  It can even be cured in a similar way to pork.  Have a look in our recipe section for one suggestion on how to do this.

A side of hogget - a sheep aged between one and two years - butchered into standard cuts (shoulder, half leg, shank, chops, fillet, crown, diced, etc.), separately bagged and frozen and shipped in an insulated container.

As the sheep is more mature the flavour is more pronounced (a lot of supermarket "lamb" is in fact hoggett).  Cook it accordingly, a tasty roast, a rich flavoursome stew.
